Portugese Fish Stew
PORTUGUESE FISH STEW
This will serve about 6 so you could half the portions (not always easy!)
Ingredients:
Olive Oil
One thinly sliced onion
Garlic to taste
Thyme (fresh)
Parsley (fresh)
Large glass of white wine
Fish or veg stock cube (or lobster bisque?)
Jar of passata + half that quantity of water
Juice of half a lemon
New potatoes, pre-roasted
Monkfish (2 fillets)
1 dozen mussels, raw
1 dozen shrimp, raw
Squid
-Heat 2 tbspns olive oil in a large pot
-Add sliced onions, garlic, one small handful chopped fresh thyme and a pinch of saffron
-When softened add a generous quantity white wine and a fish or veg stock cube (I actually added a half tin of lobster
bisque from Waitrose; it works as a stock!) and cook until the alcohol smell has gone.
-Add a jar of passata and half that quantity of water. Simmer for an hour.
-Season to taste; add juice of half of a lemon and handful of chopped parsley.
-Add your pre-roasted new potatoes, then add the chopped monkfish
-After a couple of minutes add the mussels
-After a couple of minutes add the prawns
-The same with the sliced squid
Serve with griddled ciabatta, and a topping of breadcrumbs, lemon zest and more chopped parsley
